Mini Apple Crumble Muffins!

Today I decided to make these delicious Mini Apple Crumble Muffins. It’s kind of a funny story actually, as I was intending to make them Mini Apple Oat Crumble Muffins, but I forgot to add the oats. Thinking back, it makes sense, since when I was making the topping it was a bit wet and I think the oats would have improved the texture. Also, I used 4 large apples, so I think this may have changed the overall consistency of the muffins, as they ended up being mainly apple. But hey, it’s like an apple crisp in a muffin tin :) The recipe ended up making 24 mini muffins and 6 regular sized muffins, and I ended up using mini muffin tins to make it easier to take them out. I also really wanted to make this recipe since I had some apples around the house and thought I’d try something a bit different. It’s also a lot of fun to make miniature baked goods, as they’re like little bites. Overall, I found this recipe turned out really well and I would probably use either 2 large apples or 4 regular sized apples next time. Either that or increase the amount of the dry and wet ingredients by doubling it to make the batter proportionate. I would then add the oats to the topping mixture.
