Chocolate Blossom Cookies!

Today I decided to make these delicious Chocolate Blossom Cookies to celebrate the students' last day of classes for dance. I always enjoy making a new cookie flavour for them rather than sticking with just chocolate chip cookies. I try to find inspiration based on ingredients I find in the store and when I found packs of the hot cocoa and plain Hershey's kisses, I knew that I had to use them. I typically have made peanut butter blossoms, but due to consideration for allergies, I thought I'd err on the safe side with chocolate instead. There weren't too many modifications that I had to make, but they did take around 12min to bake at 350F. They took awhile to cool and I needed to package them in time for them the next day, so I put them on a cooling rack in the fridge for about 30min and it helped solidify the Hershey's kisses. The recipe made around 24 cookies, but since I needed more cookies, I ended up doubling the recipe exactly and it worked out well. Overall, I really enjoyed making these cookies and I hope you do too! Happy baking :)

Lucky Charms Cookies!

Today I decided to make these cute and nostalgic Lucky Charms Cookies for the students' last day of spring break camp. I wanted to make a cookie that reminded me of spring and since it was the week of Saint Patrick's Day I couldn't resist. Seeing as I had to make quite a few for the students, volunteers, and parents, I decided to buy the jumbo Lucky Charms cereal box in order to have enough Lucky Charms marshmallows. I love how colourful the marshmallows are and it really added a new dimension to the flavour. I pre-sorted the marshmallows the day before, so I could just add it in on the day of baking. I ended up baking the cookies for around 13min at 350F and the recipe made around 24 cookies. Overall, I really enjoyed making these cookies and I hope you do too! Happy baking :)
