Paella Cooking Class in Seville, Spain review!

Hola everyone! Recently, I went on a trip to Spain and decided to immerse myself in the culture by taking a cooking class, while I was in Seville. After doing some research, I found Seville had the best opportunity to learn to cook paella during my travels, and found the Taller Andaluz de Cocina. It was located in Mercado de Triana, which was centrally located to my hotel. 


After reading some good reviews on Trip Advisor, I thought it’d be a fun way to experience Spain. Finding the location of the market was easy, however, it did take a few extra minutes to find the food stall number of the school, as it was located towards the back of the market from the direction we came in from. There was one main instructor and an assistant during the class, who were both very cheerful and informative! 


The class was run in English and had eleven participants, which gave more time and space for explanation and breakdown of the recipes. We each had our own apron and cutting boards, and we started off by making salmorejo. I was surprised as to how much bread and oil was involved, as I had tasted it earlier on in my trip in Madrid, but it tasted pretty good in the end, so I think the bread absorbs a lot of the oil in the blending process. 


We then went on to make a spinach and stewed chickpea dish, which I loved, as the smoked paprika really added a kick and I also love spinach. It’s always nice to find different variations of vegetable dishes worldwide rather than just having a salad as another option. We then moved on to having some sangria that they made us. I was surprised to find out it only involved a mixture of alcohol and 7-up. It was so good! I’m not usually a fan of alcohol, but the sangria was delicious, it also could have been because it was so hot outside. During our trip, temperatures were higher than normal around 30C, so any cold drink suddenly tasted ten times better. 


They also thought it was a nice addition, as we found out when we arrived that they had a fair in Seville during our stay called Feria de Abril. They have it once a year and everyone dresses up in either a suit or flamenco dress with heels, there are lots of horse carriages and they usually celebrate with food and sangria. They explained that’s why there were so many 7-Up trucks nearby. They also have a Ferris wheel and some carnival rides with flamenco shows at night and fireworks on the opening night and last evening show. We ended up visiting the fair during our stay and it was quite busy and very large, so do account for walking time (it’s held on the fair grounds).


After cooling down with some sangria, we then started to make the paella with chicken. They explained to us the importance of the type of pan, how to measure the amount of rice needed for the pan (it depends on the depth and size of the pan, as you create a path lengthwise in the middle of the dish to match the height of the water), and how the water level should be up to the handle notches on the sides. 


They also explained that traditionally Valenciana paella shouldn’t have any peppers or chorizo, and should be made with chicken or seafood. We also added artichokes, butter beans, tomatoes, salt, and olive oil. They also showed us the different spices including saffron (they sell some at Costco if you’re wondering where you can buy it locally in North America), rosemary, and smoked paprika. They also emphasized the importance of salting the paella a bit more than what you’d like when cooking the rice in the water, as it will even out once you cook it on the stove. The paella turned out delicious and it was one of the best ones I had during my stay in Spain. Generally, I found the food was the best in Seville overall, so definitely make sure to include it in your travels!


We then had some Lemon Sorbet with Cava that they made us for dessert. However, by this point, I was quite full and so I didn’t have much of it, but I really enjoyed the food and they class overall. They also offered non-alcoholic beverages and options for students who didn’t want any alcohol and also asked us ahead of time for our food preferences or allergies. Overall, I really enjoyed taking this class, despite being quite tired from our days full of activities, it was a great highlight of my trip! The instructors and other students were very friendly and kind and I would highly recommend checking it out if you’re in Seville :) I hope you enjoyed this review! Adios!
