Who loves bananas? Who loves chocolate? Well, if you said yes to both, then you're in luck because here come the mini and jumbo Chocolate Banana Muffins! A treat for everyone, and a great way to use up ripe bananas! One of the most difficult things about bananas is finding other recipes besides banana bread to use up ripe bananas. But here on my blog I've been able to find a few twists on banana recipes including the Crispy Banana Wontons, Nutella Banana Muffins, Banana Crepes, as well as some new upcoming recipes in the next few articles. Such as Banana Breakfast Bars and Iced Banana Cookies! For this recipe, I used regular sized chocolate chips, instead of the mini ones, as I didn't have any at home, but if you do happen to have them, I would definitely use those instead, as they become more of a surprise when you bite into them. As for the size, I initially started to make the mini muffins (24 in fact) but I became impatient, and wanted to speed up the process a bit, so I decided to use my giant muffin tray for the remaining batter (I ended up making 3 jumbo muffins in addition to the 24 mini muffins). So, based on my estimation I would guess that it makes approximately 48-54 mini muffins, depending on how much you fill them up. For the mini muffins, I used cupcake liners, and then for the jumbo muffins I used butter, as I didn't have a cupcake liner large enough. For the mini muffins I baked them for about 12-15 minutes and about 22-25 minutes for the jumbo muffins. Overall, the recipe went pretty well, it was moist, sweet, and a great recipe for muffins of all sizes, which is nice because even though this may seem silly, there are a couple of recipes that I've used in the past that don't work quite as well, when made in either a larger or smaller size.
