Ahh... the seasons are changing, along with the leaves, so what comes next? Pumpkins, of course! And what better to celebrate than with these delicious Mini Pumpkin Cream Cheese Banana Breads! They have the perfect combination of being both soft and creamy at the same time, due to the complimenting flavours of both the cream cheese and pumpkin flavours! Pumpkins are definitely one of my personal favourite flavours, as they can be both savoury and sweet, and can transform into almost anything from a puree pumpkin soup, to pumpkin bread, to a side dish with fish (okay, but seriously, pumpkins are never a side dish, as they are so good)! You can also infuse pumpkin tea into the milk or other liquids that you may use in a cookie recipe, to give it a little extra "something" :) And of course, it always goes great with cinnamon, nutmeg, and vanilla, yum! What better way to start off your pursuit on pumpkin recipes then with this classic Pumpkin Cream Cheese Banana Bread recipe, as you can either make it into mini loaves like I did, or you can make one large loaf, and cut them into slices for breakfast with coffee or tea. One of the best parts about this recipe is how the cream cheese filling can be found both in the middle and on top of each loaf! How's that for something special! You can also use a toothpick to swirl the cream cheese on top into your own design onto the top of each loaf. How exciting and fantastic is that?
