Who's excited for fall? I know I am, but more specifically, PUMPKIN!!!!! Yes, omg I love everything pumpkin flavoured like pumpkin tea and making pumpkin pie, pumpkin tarts, pumpkin bread, okay okay, so you probably get the idea, I just love pumpkin. Which is kind of ironic because I don't really like Halloween. Well, okay that's not completely accurate, like I love giving out candy to little kids and making Halloween baked goods, but I just don't like what happens on Halloween that much. Which is why I usually prefer handing out the candy and baking Halloween desserts. Anyways, that totally went off topic, so on with my review of the Pumpkin Loaf recipe.
Okay, so this recipe was originally made for 3 regular sized loaves but instead I decided to make a huge batch of mini pumpkin loaves because I thought they were cuter, so I ended up with 11 loaves, however, I kind of overfilled some of them, so it could probably make up to 13 mini loaves I'd say. The recipe overall turn out really well, and the only thing I'd like to add is that to add roasted walnuts because they make everything better. But the main reason that I didn't add them to this edition was for allergy purposes. Oh also you could add a cream cheese frosting or whipped cream, and also this would go really well wth hot chocolate, tea, coffee, or milk. Overall, this recipe turned out really well and I would definitely recommend it because it was super soft and fluffy and pumpkin-y and ugh just so good. Everyone I gave it to loved it, and for good reason. Anyways, I definitely recommend that you make this recipe and if so tag me on Facebook or Instagram under "Baking with Lauren" or @bakingwithlauren.
