Woohoo this is my 177th blog post for Baking with Lauren. How exciting is that? Honestly, I never thought I'd write this many posts, but I'm so glad that I have because it's actually a lot of fun! Anyways, today I'll be writing a post about these AMAZING Blueberry Lemon Mini Muffins with a Lemon Glaze! They are absolutely delicious, and I know I know I say that about a lot of my recipes, but they really are that good, and so adorable! I also thought it'd be great to make these now since it's almost spring and what better way to celebrate than with a berry and citrus infused cute mini muffins! Perfect for breakfast, snacks, etc. As for the review of the muffin recipe, I was really happy with this recipe, as it was super simple to make and it turned out amazing. One of the key ingredients for this recipe is whole milk also known as buttermilk, which you can make by combining 1/2 cup of milk (2%) with 1/2tbsp of lemon juice together and letting it sit for approx. 5-10min before mixing it together. And voila you have your very own whole milk without having to separately go out to the store and buy a carton of milk (do they still call it that?) and then not know what to do with it. I usually get confused and end up making like 10 different recipes, as I always overestimate how much I need (because more is better than less, right?), so this recipe will save you a ton of time. Assuming you didn't overbuy milk like I did haha. Anyways, another tip is that for the mini muffins they are baked for approx. 18-23min and I recommend checking them at the 18min mark with a toothpick to check. I also made 3 regular sized muffins and they required about the same amount of time surprisingly. Since I had already made about 24mini muffins, I used a muffin pan with 6 muffin pan tins (holes/inserts, I'm not really sure what you call it, but you get the idea, if you do know let me know in the comments down below!) and I only used 3 of the tins, so for the remaining 3 tins I filled them 2/3 full of water to ensure that the pan doesn't burn and also so that the muffins stay super delicious and I know a lot of people hate this word but, moist. Also for the lemon glaze this is an optional step but it's super fun to do, I like to use a spoon and swipe across with the glaze back and forth to make zig zag stripes. But don't worry if you end up covering the entire muffin top, trust me I've done this before, all you have to do is either let it be and enjoy the sweet goodness or you can use a spoon to evenly spread out the glaze and redistribute it among the other muffins.
