Check out these super delicious Mini Cashew and Raisin Banana Breads! Perfect for a snack or dessert. So easy to make with no mixer required. Simple ingredients and amazing taste. To make these banana breads absolutely delicious and different I crushed a few handfuls of cashews and added them in to the batter, as well as approximately two handfuls of raisins. For this recipe, I used ordinary raisins, however, you can try to use sultana raisins or any of your favourites. You can also change up this recipe to be a plain banana bread or add chocolate chips, walnuts, pine nuts, dried cranberries, blueberries, apricots, etc. This recipe made approximately seven mini banana breads or one large loaf. I recommend buttering the sides of the pan with either butter or margarine liberally as it'll make it so much easier to take them out of the pan afterwards. Since I changed this recipe to be about mini banana breads instead of a regular sized loaf it takes approximately thirty-five minutes instead of 1hr. Also to check for when the bread is ready I recommend using a wooden toothpick, as metal doesn't always detect the doneness of the bread as accurately. Overall, this recipe was delicious and a great treat for all, make sure to try out other versions and have fun with it! Enjoy! :)
