Today I decided to switch things up a bit for some of our healthier readers and make some delicious Healthy Mini Cocoa Honey Oat Muffins! These mini muffins are great on the go and as an afternoon snack for you and your kids. Some the alterations I made for this recipe include substituting the flax seeds with coconut flour on a 1:1 ratio simply because I ran out of flax seeds as well as substituting a 1/4 cup of dried apricots with a 1/4 cup of dried mango. Also, since I ran out of applesauce I made my own in the Vitamix by blending diced apples together until smooth. As you can tell there were a lot of variations and alterations I made for this recipe but the good news is that for you, you can also switch around the ingredients as long as they are fairly similar if you run out of a certain ingredient as well. Since I made these muffins miniature sized instead I baked them at 350F for 14min instead of 15-20min but you could also bake them for about 13min if you like your muffins softer. Overall, this recipe was super easy to make and a healthy treat for everyone! I hope that you liked this recipe and happy baking!
