Who else is looking for an alternative to making regular banana bread with their leftover bananas? I don't know about you but I sure do. While making banana bread is still delicious it can become a bit boring over time and once in awhile you just want a bit of a change. So today I decided to make a spin of the traditional banana bread recipe and make this delicious and soft Banana Bread Crumb Cake! Another reason I decided to make it was because the recipe used whole milk and if you read my previous post I had a lot of leftover whole milk from some that my friend gave me not too long ago. While the recipe requires only 3 bananas I had 4 so I decided to use the 3 of the bananas in the recipe and use the fourth banana by cutting it into slices and layering them in rows on top, approximately 20 slices. As for modifications, I would recommend using either a pastry blender or fork to break apart the butter in the crumb portion of the recipe. As for the glaze, if you want to make it pretty like the one in the recipe then put the glaze in either an icing bag or ziplock bag and cut a small hole with scissors in the corner of the bag. From there drizzle the icing in a diagonal fashion or to your personal preference. As for baking the cake it took closer to the estimate on the recipe of 55-57min in the oven plus 10-12min after the oven has turned off. Overall, this recipe turned out fairly well, however, I found this recipe to be a bit on the soft side. This recipe was pretty good but I think I still prefer some of the other recipes I made for alternatives to banana bread.
As a side note, the way I found this recipe and the one from the previous post was from a website called: feast.com, where you can click in a box of the ingredients you want to use and it will find recipes that contain those ingredients. I found it to be really useful and it definitely expanded my original ideas of what I could make with different ingredients. Overall, I hope that you enjoyed this review and happy baking! :)
