It's Maple Pecan Banana Muffin Time! Yay! I can't believe it but I actually found another alternative recipe that uses bananas that isn't banana bread! It's quite remarkable actually, the fact that there are so many different variations you can make with bananas, it's practically endless. This recipe turned out really well and on the plus side it is also vegan and essentially dairy-free. It was kind of by random actually, as I found the recipe on Pinterest and I didn't realize until after looking through the recipe more thoroughly that the recipe was vegan. So for those who are vegan or lactose sensitive/intolerant this one's for you! It also turned out super fluffy and moist and very accurate I would definitely recommend making this recipe and 18min is the perfect baking time for these muffins. As for alterations and changes, I roasted the chopped pecans in the toaster oven for about a minute but it could probably be toasted for about 1.5min. If you don't have a toaster oven you can always toast it in the oven, however, I'm not really sure as to what the temperature and time to do so. I also used tin foil on the tray to ensure it was evenly spread out. Also since I didn't have turbinado sugar I sprinkled granulated sugar (or regular sugar) on top of the muffins and didn't need nearly as much sugar on top as they recommended. Rather than using 1/4 cup of sugar on top I used approximately 1-1.5tbsps sprinkled distributed over the 12 muffins. It was fairly accurate and it did make exactly 12 muffins! As for the pecans on top I sprinkled a bit more pecans on top as my mom really likes pecans plus it looked a bit sparse a only 1/4cup so I would recommend adding another 1/8 cup of pecans on top. As for the glaze I ended up using 2tbsps of water, as 1tbsp was definitely not enough, however, the recipe did make a generous amount of icing and I had a lot left over. As for drizzling on the glaze I simply used a fork to drizzle across the muffins in a zig zag pattern. Overall, this recipe turned out really well and I hope you have a great time baking!
