Nut Free Cacao Protein Bites!

Today I decided to make a healthier dessert/snack option for the healthier viewers out there! This recipe is both delicious and nutritious, who says desserts can't be both healthy and delicious at the same time :) This recipe turned out really well and was fairly simple to make especially if you already have a lot of healthy ingredients in your cupboards previously. The only substitution I made was to use pine its instead of pepitas as I had run out of them and forgot to buy more at the store. Luckily it all worked out! Also, I didn't end up soaking the dates in hot water as the dates I had were really soft. I usually get the dates from Costco, which are a great brand of Medjool dates for occasional snacking. I also didn't use the coconut oil for rolling the mixture into a bite, as I found the mixture to be fairly easy to combine together. This recipe is best eaten within the first 2-3 days of baking. However, I have heard that freezing them in a ziplock bag prolongs the length of time of freshness.
