Who loves muffins? Anyone like pumpkin seeds? Do you also happen to have apples lying around? Well, if so then try out these amazing Pumpkin Seed and Apple Jumbo Muffins! Perfect for on the go and as a healthier treat to pack with your kid's lunches. The main reason I decided to make these today was because I happened to have a lot of pumpkin seeds lying around hence my earlier questions haha and I also felt like baking! Soon as you know it, I'm looking up on Google, "pumpkin seed recipes" and boom this one shows up! (This is pretty much how all of the posts on my blog kind of go but sometimes if I really want to go extra I add in "best pumpkin seed recipes" haha. Wow I know, mindblown!). Anyways, now for the modifications or alternative versions that I did with this recipe! So for a lot of these ingredients it calls for organic ie. flour, sugar but since I didn't have any at home I just used the regular kind. However, if you are looking for a healthier alternative than yes organic is better, I just didn't have it on hand at the moment and really wanted to bake right then and there haha (although I did use organic apples and organic oats, and I used organic flax meal and organic coconut oil as well, so I think I did pretty good haha). I also used a pinch of salt rather than 1/2tsp, as I'm not a huge fan of adding a ton of salt to baking recipes but it is good to add it in for certain recipes to enhance the flavours of other ingredients. For the coconut oil I melted in the microwave for about 30 seconds, and I also grated a bit more ginger than what was recommended, simply because I didn't keep track of how much I grating and made more than I needed. I also chopped the apples into bigger chunks and didn't chop the pumpkin seeds, as I like the texture a bit chunkier also I didn't have the patience today to cut them into tinier pieces haha. Although, make sure that if you do end up doing this as well that you evenly distribute the apple chunks and pumpkin seeds, as there needs to be enough batter to coat the ingredients to bake evenly and to ensure it doesn't crumble apart. Also, I ended up making 6 jumbo muffins (18min in the oven-rotated the pan after the initial 15min) and 3 regular sized muffins (13min). I also used margarine to grease the muffin pan rather than using muffin tins but you can also grease the pan with melted coconut oil or butter or olive oil if you prefer using another type of method. But overall, the recipe turned out really well, and I would give this recipe a thumbs up. Let me know what you think in the comments down below, happy baking! :)
