Today I made a delicious rendition of a classic recipe! As you can probably tell from my previous post I have a lot of cherries around the house and decided to use them through some of my upcoming recipes. I also added apple, pecans, and chocolate chips to compliment the flavours. I ended up crushing the pecans and adding approximately 1/3 cup. To crush the pecans you can use a rolling pin and put the pecans in a large ziplock bag and crush them with the rolling pin lightly against the counter (make sure your counter can handle this before using this option). You could also use any type of blender, a Magic Bullet, or Vitamix. My favourite method is using Magic Bullet or if you're in a rush crumbling them with your hands haha I realize this isn't the most ideal option but hey if you're short on time and you don't mind a variety of pecan piece sizes this is a great option too! For the chocolate chips I used mini chocolate chips simply because I find them easier to incorporate a chocolate infused flavour and melt with each bite even after they finish baking. I used about 1/4-1/3 cup of chocolate chips and used 1 regular sized apple for this recipe. I left the peel on, however, you can peel the apple if you like and then I cut them into smaller pieces, the size is up to you. I also pitted approximately 1/3-1/2 cup of cherries and then cut them into smaller pieces. In my earlier post, I discussed the straw method for cherries that I experimented with, so feel free to check it out if you want to see how that turned out. This recipe ended up making 8 mini banana breads, which is great if you have a big occasion for banana breads haha. OVerall, after some reviews I realized that you could opt out for the apple if you don't have any around as the cherries overpower the flavour of the banana breads. However, apples would go really well in a cinnamon bread. I hope that you enjoyed this recipe and happy baking :)
