Plum and Lemon Mini Banana Breads!

Today I decided to make a twist on a classic in the kitchen, namely banana breads by adding in plums and lemons to spice it up. Part of it was because I had a lemon lying around and a lot of leftover plum as you can probably tell by now by how many posts recently have been on plums alone! Also, I had some ripe bananas and thought bingo I'll just mix it all up together! I followed the usual recipe I make for banana bread and then halved and quartered and sliced approximately 12 small plums or so and added them to the mixture. In hindsight I think I added too many but I seriously have so many plums, which I'm grateful for but at the same time I'm trying to think of ways not to waste them and there are just so many!! Even after numerous recipes I still have more than enough plums left for about 3-4 more recipes just on plums! It's crazy! Anyways, so to add a different flavour I squeezed a whole lemon in to the batter along with the zest of the rind of the lemon and mixed it all up together and made a total of 8 mini banana breads. However, like I mentioned earlier I think I got a bit carried away as I ended up having to throw one of them away as it was too moist and got all squishy but the rest of them turned out pretty well. I also only needed to bake them for about 28min-30min rather than the typical 35min, so I'm not so sure what to think of that but it also could explain why one of them wasn't completely cooked but I'm still fairly certain it was due to the high concentration of fruit in it. However, this recipe ended up being a bit too lemony but I guess i just got really excited about using up the lemon and zesting away haha. I suppose, I should maybe make lemon themed desserts soon since I have so many leftover lemons-maybe a lemon loaf, lemon bars, lemon meringue pie, or something new. I think if I had complemented the lemon flavour with a sweeter fruit such as blueberries it would have turned out better to offset it and used only half a lemon it would've been more complementary. Anyways, this combination didn't turn out as well as I had hoped but I hope you enjoyed this review and keep on baking! :)
