Blueberry Chocolate Marshmallow Muffins with Chocolate Chips and Banana Slices!

Lauren Tang

Today I decided to make a muffin recipe combining a bunch of flavours that I had lying around the house that I thought would be an interesting combination. Since I was unable to find a recipe containing all of these flavours I decided to pick a chocolate muffin recipe and then add and alter to it to make this updated version of Blueberry Chocolate Marshmallow Muffins with Chocolate Chips and Banana Slices. To make this I added the recommended 3/4 cup of chocolate chips to the batter and then added about 1/2 cup of mini marshmallows, and 1/3 cup of fresh blueberries. I also added a few chocolate chips on top of each muffin and then put a slice of banana on top of each muffin to add another dimension. However, there isn't actually any banana inside of the muffin, I know super deceiving but I didn't want to confuse the palate by adding too many flavours all at once, but I may have ended up doing that anyways haha. I used muffin tins for to line the pan for convenience and the recipe made 12 regular sized muffins and 12 mini muffins. I filled each muffin about 3/4 full. The regular sized muffins took about 8min at 425F and 15min at 350F. For the mini sized muffins it took about 8min at 425F. For the brown sugar since the one I had was crystallized I eyeballed the amount I needed and then added it to my Vitamix blender to break it up and I also used best brown sugar rather than light brown sugar, but the recipe still turned out well. I was actually both surprised and relieved that this recipe turned out so well but I've done this a few times before with other recipes but never with this many flavours at once. Anyhow, I hope that you liked this review and happy baking :)
