Today I decided to do a twist on a classic by making a fancier version of banana bread: Strawberry Cashew Chia Seed Banana Bread with a Lemon Glaze. I followed the recipe about the same as I normally did with ¾ cup of sugar rather than 1cup. As for additions, I sliced about 8-10 medium/small strawberries and added about ½ cup of chopped cashews and added about 1/8 cup of chopped walnuts for a surprise. I then added about 3tbsps of chia seeds. Then I layered about 6 sliced medium strawberries into 5 rows, sprinkled about 2tbsps of chia seeds, and sporadically sprinkled about ¼ cup of chopped cashews on top. It took about 53min to bake, and I used a square pan rather than the mini banana bread pan I usually use. As for the lemon glaze, I used a recipe from ‘Food and Wine’s” version online as a basis and then modified it by adding 2tbsps of milk, used ½ squeezed lemon juice and ½ grated lemon rind, and ½ cup of icing sugar. After letting the banana bread cooled, I layered the icing in a zig-zag fashion over the top of it. Next time, I would make the lemon glaze a bit less runny and add about ¼ cup extra of powdered sugar. Overall, this recipe turned out way more exciting than my previous banana bread renditions, and I hope you liked it too, happy baking :)

Here is the altered lemon glaze recipe I ended up doing:
-1/2tbsp milk
-1/2cup icing sugar
-1 lemon
-juice of 1/2 a lemon
-1tsp melted butter, unsalted
1. Mix together all of the ingredients in a small bowl and pour over your desired dessert.
