Today I decided to make these delicious Banana Streusel Muffins! They turned out so well, and those who ate them said they were super fluffy, soft, and just the right amount of sweetness to add to your day. For the modifications, I made homemade buttermilk by adding ¼ tbsp. of lemon juice to ¼ cup of milk, mixed it together, and let it sit for 5-10min. However, you could also use 1/4tbsp of white vinegar to do this as well. For the brown sugar, I used best brown sugar and since it had clumped a bit, I added them to the Vitamix until it was completely smooth before adding it to the rest of the mixture. As for the oil, I used vegetable oil and it seemed to work well. The recipe made about 12 regular-sized muffins. However, if you wanted to spread it out more, you could make up to 15 regular-sized muffins. I used a 1/3 cup to fill the muffin tins along with a spatula, which worked out great. As for the streusel, I used a fork to cut up the butter into the mixture. The recipe was pretty much exact in terms of timing at 8min at 425F and 8min at 350F. As a side note, make sure to be aware that the bottoms are a bit greasy, so make sure to use a napkin or plate or to wipe the bottoms first. Overall, this recipe turned out really well and I hope you enjoyed this review.
