Over the holidays I decided to make a Christmas themed banana bread using my favourite banana bread recipe. In terms of alterations, I used 4 ripe bananas instead of 2-3 because I had them on hand and I find it makes the bread even softer. I also used 3/4 cup of sugar, but this is up to your preference. I then added 1 tsp of cinnamon, along with 3/4 cup of chopped walnuts in to the batter. From there, I mixed together about 1/4-1/2 cup of pumpkin puree (not the filling kind) with about 1 tbsp of maple syrup to add some sweetness. After greasing the pan with margarine (you can also use cooking oil/spray or butter), I then poured in the batter. Then after smoothing it out,I added the pumpkin mixture on top in a swirl ('S') pattern with a spoon. From there, I added about 1/4 cup of crushed walnuts and sprinkled some cinnamon on top of the batter. After taking it out of the oven, I then drizzled maple syrup in a zig zag pattern diagonally across the bread after it had cooled. In terms of baking time, it took about 45 minutes at 350F in a square pan. Overall, I hope you enjoyed this holiday rendition and I'll leave the alterations down below. Happy baking :)
