Today I decided to make yet another twist on a classic recipe of Banana Bread by making them into Banana Bread & Berry Kebabs with a chocolate drizzle and icing sugar sprinkled on top. To make these I simply followed the recipe for the banana bread recipe down below with the only modifications being I used 3/4 cup of sugar and 3 ripe bananas, as well as pouring the batter into a square pan for 45 minutes at 350F. I also greased the pan beforehand with margarine, but you could also use butter, cooking oil/spray, etc. After taking the bread out of the oven and waiting for it to cool at least 20 minutes I then cut it into squares 4x4.
From there I used wooden skewers to put a piece of banana bread through the middle and then alternated with either a small strawberry that I cut the stem off of or 3 blueberries. I did this pattern with three banana bread pieces in total, 2 strawberries, and 3 blueberries. However you could also try a different pattern with multiple different fruits. I then melted milk chocolate using the Chipits brand by placing a small bowl into a medium sized bowl filled with hot water and then placing the chocolate chips inside of the small bowl to melt and mix around until it melted with a spoon.
From there, I drizzled the chocolate with a fork diagonally across the banana bread and berry kebabs and then sprinkled some icing sugar using a sifter on top. Voila! Your very own banana bread and berry kebab! A combination that you never knew that you needed! I'm so excited to share this with you all, as I got this idea while flipping through a cookbook at home where they did this with brownies and strawberries and another where they did this with shortcake and strawberries!
