Today I decided to use up the remaining bananas in the household and make these delicious Banana Pecan Scones with a Maple Glaze! These are super easy to make as far as scones go and they use common household ingredients, perfect for those of you baking during your quarantine! In terms of modifications, I used regular unsalted butter instead of coconut oil, as I'm running low on coconut oil and I didn't want to use it up, as supplies are sparse at the local grocery stores. I also grated my own ginger instead of ground ginger, as I still haven't gotten around to buying any and I like how it adds a little extra something special to recipes. I also used maple syrup instead of honey, pecans instead of walnuts (running low on walnuts), and regular milk instead of almond milk (ran out of almond milk or dairy-free alternatives). As for the flour, I used whole wheat flour as I didn't have white whole wheat flour, but you could also use all-purpose white flour if you don't have either flour at home. As for chopping the nuts, I put them in the Vitamin for about 5 seconds and it was good to go!
For baking the scones, I baked them for about 17minutes and it makes 8 triangular scones. As for the glaze, I opted for a runnier glaze to make it easier to drizzle on top and heated it up in the microwave for 15 seconds before drizzling it on the scones. I then used the remaining 1/4 of the chopped pecans to sprinkle on top of the scones and voila you have your Banana Pecan Scones with a Maple Glaze! Overall, I really liked how easy this recipe was and I tried to make a healthier recipe than normal.
For those of you who are vegan or vegetarian, you can easily swap some of the ingredients in the recipe to adapt to the ingredients in your household.
