Baked Blueberry Donuts!

Today I decided to make these delicious Baked Blueberry Donuts! Perfect with a cold glass of milk or cup of coffee. I loved how simple they were to make and how you could use any fruit. For instance, you could use strawberries, raspberries, or blackberries for a similar result. In total, this recipe made 26 mini donuts and took about 18min to bake per batch at 400F. I would recommend letting them cool about 15min before dipping them in the blueberry glaze. To let them harden overnight, I put them in the fridge on a baking sheet with saran wrap on top. Baked Strawberry Donuts!

Today I decided to make another twist on baked donuts and add in some strawberries. These were a lot of fun to make, however, I did find that the batter was a bit wet. I think this might be due to the proportion of strawberries added to the mixture and could also be due to the humidity of the summer air. In total, this recipe made 12 mini sized donuts and took about 15min to bake at 350F. I would recommend using 2 medium sized strawberries for the icing, as it was a bit runny and perhaps using 1/3 instead of 1/2 cup of strawberries for the donuts. Also, make sure to let the donuts cool before dipping them in the icing. Overall, I had a lot of fun and they were super cute! Happy baking :)

Mini Almond Croissant Banana Breads!

Today I made these cute and delicious Mini Almond Croissant Banana Breads! I absolutely love almond croissants and I knew once I saw this recipe I had to make them. A few tips to making them, include using a mixture of cream and water for the milk substitute simply because I ran out of milk (40mL of cream and 40mL of water). I also scooped the almond butter into my Vitamix to blend to create a smoother texture as it was stuck at the bottom of the container and it was a lot better! I also used mini bread liners before scooping in the mixture and this made for an easier cleanup and more complete bread. As for the apple sauce, I only needed to use about 1 snack size cup of apple sauce and it was the correct amount for 80mL. In total this recipe made 8 mini banana breads and took approximately 35min to bake at 350F. I hope you enjoy baking these banana breads and have fun baking :)
