Banana Chocolate Chip Oatmeal Cookies!

Today I decided to make these delicious Banana Chocolate Chip Oatmeal Cookies! Perfect with a cold glass of milk or hot cup of coffee. Not only was it easy to make, but you could also prepare enough for the week. It uses common household ingredients, which makes it a great alternative to banana bread when you have leftover bananas. I didn't have many modifications, however, you could add in some chopped nuts or dried fruit such as raisins or dried cranberries instead for another variation. In total, this recipe made 19 cookies and took about 15min to bake at 350F. Overall, I had a lot of fun making them and I hope you do too! Happy baking :)

Mini Easter Cheesecakes with Chocolate Ganache and Roasted Coconut Flakes!

Happy Easter! Today I decided to make these cute and delicious Mini Easter Cheesecakes with a Chocolate Ganache and Roasted Coconut Flakes, topped with peanut butter Cadbury eggs. I thought it'd be a cute addition for Easter to celebrate. I love how simple this recipe was to make and that you could easily opt out different ingredients such as using a strawberry or blueberry topping instead of chocolate or a white chocolate ganache. I used whipped cream since I didn't have any whipping cream on hand and it worked out great. I just put it in the microwave so that it would deflate a bit and then added in the chocolate chips to create the ganache. As for the coconut flakes, make sure to monitor them in the oven as you roast them, as they can burn quite quickly. Overall, this recipe turned out really well and I hope you have fun baking them too! Happy Easter!

Mini Banana Baked Donuts with a Vanilla Glaze!

Today I decided to try a different type of banana dessert and made these delicious Mini Banana Baked Donuts with a Vanilla Glaze. These were fairly easy to make and made 12 mini baked donuts in total. It only took about 18min in the oven at 350F. I let them cool for about 10min before drizzling the vanilla glaze on top. I did end up having to add in more milk, as the texture was a bit thick, however, it still turned out okay. I used two small bananas and it seemed to be enough for the recipe. You could also try adding in mini chocolate chips, butterscotch chips, or drizzling a chocolate glaze on top instead. Overall, this recipe turned out fairly well and I hope you have a great day!
