Carrot Cream Cheese Chip Cupcakes with Cream Cheese Frosting!

Today I decided to make these delicious Carrot Cream Cheese Chip Cupcakes with Cream Cheese Frosting! Perfect for spring shower or sunny afternoon. Making these cupcakes was fairly simple and didn't require too many substitutions or alterations. Some tips include using 3 medium/large carrots for the shredded carrot portion, as well as using green gel food colouring to create a grass-like appearance. I also used a fine tip for the icing and some bunny/chick sugar characters to put on top of the cupcakes. I also added 1/2 cup of cream cheese chips to the batter instead of walnuts, but you could also add raisins instead if you prefer a different flavour. In terms of baking, it took approximately 20min at 350F and made 14 cupcakes in total. As for cooling time, I waited about 15-20min to make sure the icing wouldn't melt.
