Cupcake Decorating!

Writer's picture: Lauren TangLauren Tang

Recently, I had a cupcake order for a wedding shower and to celebrate I decided to make these delicious cupcakes! A set of vanilla cupcakes and red velvet cupcakes frosted with Vanilla Buttercream Frosting. To spice it up a bit, I decided to focus on the decorations this time, as the recipes are the same ones I've previously used in other recipe reviews, as linked down below.

Some modifications I made for the buttercream recipe include adding 1.5 tbsps of vanilla extract and removing the ruby chocolate.

Pink Vanilla Cupcakes:

To make the vanilla cupcakes, I decided to pair them with a light pink buttercream by adding approximately 6 drops of liquid red food colouring. I then decided to add some silver sprinkles on top for an elegant finish. This required 1 batch of frosting to frost 12 cupcakes and I used a 1M Wilton icing tip. This recipe fell a bit short of the dozen cupcakes I needed, so I made 2 batches of the recipe. As 1 batch only made 9 regular sized cupcakes, 2 batches made 12 cupcakes and 2 jumbo cupcakes, which I later used to create the mini three-tier wedding cupcake cake. As for baking time, it took 23 minutes in the oven at 350F.

Rainbow Vanilla Cupcakes:

I also made a test batch the night before the order, which were a bit moist for some reason. They were okay for regular consumption, but not quite up to parr, which is why I made the new batches the next day. However, as a result I had an extra 17 cupcakes, which I then decorated with a rainbow frosting. This was actually the result of a mistake because I meant to use these flower tips, but they didn't work out quite like I wanted.

So, I ended up having a bunch of coloured frosting: pink, purple, blue, yellow, and green, which I then added to the piping bag and created the technicolour effect. After that I decided to add a purple/blue/white sprinkle combination I bought at the store awhile ago, which added to the galaxy appearance.

Red Velvet Cupcake Decorations:

For the red velvet cupcakes, I left the buttercream as an off-white and added heart sprinkles on top, they're not pictured below, but if you go to my July 13th, 2021 review, they look practically identical, besides the use of cream cheese frosting. I ended up needing 1 batch of frosting to frost 12 cupcakes and I used a 1M Wilton icing tip. This recipe ended up making 17 red velvet cupcakes plus 10 mini cupcakes and took 16 minutes at 350F.

Three-Tier Wedding Cupcake Cake:

As for the three-tier wedding cupcake cake, I used 1 jumbo vanilla cupcake, 1 regular vanilla cupcake, and 1 mini red velvet cupcake. I then cut off the top of each cupcake to create a flat base and then cored out the middle of the jumbo cupcake and filled it with vanilla buttercream and 1 small strawberry. I then piped frosting on top and spread it in a thin layer to create a crumb coating over the sides and top of the cupcake.

I then put it in the fridge for 15 minutes and then did the final coating on top once it had chilled a bit. From there, I did the same procedure with the regular sized cupcake, except I didn't add the strawberry, but I did core the middle to add buttercream frosting. I then piped a small amount of frosting in the middle of the jumbo cupcake and placed the regular sized frosted cupcake on top after the regular cupcake was chilled.

Afterwards, I added the frosted mini red velvet cupcake on top and did a final frosting coat. From there, I coloured some of the frosting a light pink and did some small beading around each tier twice, plus small icing rows along the bottom, and added pink + white sprinkles in between each string. I then added silver sprinkles on top of the mini cupcakes and frosted 2 hearts (1 pink and 1 white) on top and added 2 heart sprinkles on top of the hearts. Voila! You have a mini wedding cupcake cake!

Three-Tier Cupcake Tower (Red Velvet + Vanilla Cupcake):

As for the last decoration experiment, I decided to make this three-tier cupcake tower combining 1 jumbo vanilla cupcake, 1 regular vanilla cupcake, and 1 mini red velvet cupcake. This was super simple to make and all I needed to do was to create a simple swirl on top of each cupcake before stacking them on top of each other. However, I did use a finer tip for the mini cupcake, which turned out really well.

Conclusion:

Overall, I hope you enjoyed this cupcake decorating post and have fun with frosting! In total, for all of the cupcakes and cakes I ended up making 5 batches of buttercream frosting. Happy baking :)
