Coffee Cake Banana Bread!

Writer's picture: Lauren TangLauren Tang

Today I decided to make this delicious rendition of a classic banana bread mixed with a traditional coffee cake to make Coffee Cake Banana Bread! One thing that's an interesting fact about coffee cake is that it generally doesn't contain any coffee but is called such as its typically eaten with a cup of coffee. However, if you would like to add a coffee component, then you could add a 1/2 tsp of espresso powder to the mixture before baking.

Another option would be to create a coffee glaze with about 1/2 cup of icing sugar and 1/2 tbsp of instant coffee plus a little bit of milk and vanilla mixed together to pour over the bread once it's completely cooled. An alteration I would make next time would be to only make half of the amount of the crumb mixture, as I had too much left over. However, this could also be because I baked the bread into one loaf pan instead of two pans.

Also, make sure to grease the pan with margarine before baking and if you do end up making it in one pan, it will take about 65 minutes to bake in the oven at 350F. If you wanted to add another twist you could add cocoa powder and chocolate chips to half of the mixture and alternate pouring in each mixture into the pan for a marbled banana bread! Overall, I hope you enjoyed this review and have fun baking :)
