Chocolate Dipped Candy Cane Chocolate Cookies!

Today I decided to make these candy-cane themed Chocolate Dipped Candy Cane Chocolate Cookies for the holidays! After having so many leftover candy canes at home I thought it'd be fun to incorporate some of them into a dessert. I've made a similar recipe a few years ago but I opted to try out a new chocolate cookie recipe base.
The original recipe is only for the chocolate cookies portion and then I improvised for the dipping and candy canes. There weren't too many modifications I needed to make for the cookies recipe, however, I did leave them in the oven for about 12-13min at 350F instead of 9min, as I didn't feel that they were fully baked yet. I let them cool for about 10-15min on a cooling rack after I took them out of the oven.
This recipe made 27 regular-sized cookies in total. As for the chocolate dipping, I used chocolate candy melts that I melted in the microwave in 30sec intervals and stirred with a spoon in between and then added whipping cream to create a thicker texture. Typically, I would have used shortening instead but I ran out of shortening at home and it worked just as well.
I then crushed the candy canes in a Vitamix for an even texture, but you could also put the candy canes in a ziplock bag and roll them with a rolling pin or use a blender or food processor for a similar effect. I then dipped the cooled cookies half-way into the chocolate melt and then sprinkled on crushed candy canes on top for the full effect. Voila! You have your very own spin on a chocolate cookie!
