Butterscotch Chocolate Chip Banana Bars!
October 7th, 2025
By: Lauren Tang
Today I decided to make these fall Butterscotch Chocolate Chip Banana Bars! Great with a cup of coffee or piping hot cup of tea in the morning. I added in the mix of butterscotch for an added dimension of flavour beyond the typical chocolate chip. I used granulated sugar instead of coconut sugar, 3 ripe bananas, and 2% cow's milk instead of almond milk. I added in about 1/4 cup of butterscotch chips and 1/4 cup of chocolate chips. I also greased a square pan with margarine to prevent the pan from sticking, but you could also flour it or use parchment paper. I let the bars cool for about 15min after baking for 20min at 350F. Overall, this recipe turned out fairly well and I hope you like it too! Happy fall baking :)

Mini M&M Cookies!
October 28th, 2025
Today I decided to make these cute and delicious Mini M&M Cookies! These are great with a cold glass of milk or cup of hot cocoa. I've made these cookies before with a different recipe, but I felt like this recipe had a nice appearance and overall texture compared to the previous recipe. The original recipe uses chocolate chips but I substituted them for mini M&Ms. You could also swap it out for any other chip such as butterscotch, peanut butter, or caramel. In total this recipe makes approximately 29-31 cookies per batch and takes 13 min at 350F to bake. I also let them cool for about 10-15min before packaging. At one point I ran out of brown sugar as I was making multiple batches to accommodate this I made my own brown sugar with 1 cup of granulated sugar and 1tbsp of molasses combined together in a bowl. You can add more molasses depending on if you want a demerara vs. best brown sugar texture. Overall, this recipe turned out really well and I hope you have fun baking them too! Happy baking :)
