Tiramisu Cupcakes!

Today I decided to make these delicious Tiramisu Cupcakes! I haven't made tiramisu cupcakes in a long time but for my friend's birthday I thought I'd try it out again but with a different recipe since tiramisu is their favourite. Making these cupcakes wasn't too difficult but there were a few alterations that I made. For instance, I used regular 2% milk mixed with 1tsp of lemon juice to make the buttermilk. For the heavy cream I used whipping cream which was 33% fat, as not all stores will say heavy cream on the packaging, but this is the equivalent substitute. For the instant espresso powder I ground up instant coffee beans instead and this worked well to incorporate into the cupcake batter. This recipe differed from the other one which had my poke holes into my cupcakes and drench it in coffee. I think this version is nice so that it doesn't deteriorate as quickly. For the mascarpone, I found it in the fridged section near the fancy cheeses, so it may not be in your regular cheese/dairy/cream cheese section but in a specialty area. I was able to make the cupcakes the day before and stored them in a ziplock bag and then frosted them in the morning so that they were fresh for the event.
