Mini Apple Pie Cheesecakes!
By: Lauren Tang
Today I decided to make these delicious Mini Apple Pie Cheesecakes as it was my friend's birthday and her two favourite desserts are cheesecake and apple pie, so I decided to combine them into one dessert. I had made a similar recipe years ago but it didn't turn out well, so I decided to make my own version using my favourite cheesecake recipe and my favourite crumble recipe combined together and I'm so glad I did! As it turned out so much better this time around. A few modifications were made as I ended up making 16 mini cheesecakes and only had to bake them for 35min in total and I used muffin tins. As for the apple pie filling, I used two apples cored and peeled and cut them into slightly smaller pieces than I would have used for a standard apple pie. As for the streusel topping I added it after the cheesecakes were baked and I had added the apple pie filling on top. I then baked them in the oven for an additional 5min at 350F with the streusel topping. Overall, this recipe turned out really well and I hope you enjoyed this baking review! Happy baking :)
