I'm back! Haha after a very long break, I'm finally back from a hiatus of posting. Lately, it's been quite busy and I haven't had the chance to bake in over a month, which is unusual for me, as I usually bake 1-3x per week. However, things were changing and unfortunately, baking took the hit, but I'm happy to be back with these delicious Mini Apple Pies!
Making these were so much fun and what a great de-stresser! I ended up making 15 mini apple pies and used 5 medium sized Joan Gold apples, as I recently went to an apple farm for apple picking and pumpkins for Halloween carving, which were perfect for an inspired dessert.
In terms of modification, I ended up needing to make two batches of the pie dough, as there was extra apple pie filling and also to make the criss-cross pattern on top of the mini pie. I also ended up needing a bit more butter to add to the top of the three extra mini pies, as well as using 1 egg yolk to brush on top of each mini pie before baking.
This created a beautiful golden glaze and sprinkled with a little bit of sugar on top of each pie added a nice crunch. In terms of criss-cross pattern, I ended up using 3 strips vertically and 3 strips horizontally, but you could make any pattern you'd like.
As for cooling time, it took about 15min and baking time was 18 minutes at 425F. Overall, this recipe turned out really well and I hope you really enjoyed this review! Happy baking and I'll be back with another review shortly this time :)
