Today I decided to make these delicious Healthy Apple Muffins, which are not only gluten-free, but also sugar and dairy-free. The perfect snack or dessert for those of you who need a pick-me-up in the afternoon, as well as great for those of you have dairy or gluten allergies. However, keep in mind that this recipe does include eggs and honey, so it's not vegan, but you could substitute this for another sweetener such as agave or maple syrup and ground flax eggs (1 tbsp of ground flax seeds with 3 tbsps of water). It also uses almond flour, which you could substitute with another gluten-free flour such as chickpea, brown rice, etc.
Recently, I injured my left foot during a dance class and have been on crutches for the past two weeks, so it's been a bit of a challenge getting around in the kitchen. Fortunately, I'm finally starting to almost fully walk again, which is helpful for baking. Thankfully, my dad was able to help me retrieve some of the ingredients before I began, so I didn't have to look around the house and I also was able to sit down while cutting the apples. Part of the reason I decided to make these muffins was because my friend/neighbour Vivien lent me one of her favourite cookbooks and also my other neighbour invited my family over to pick apples from her apple tree, so I wanted to make use out of them. Hint: you might see a few more apple recipes in the future, as I still have so many mini apples!
The recipe made 12 regular-sized muffins in total and took 25min to bake and took 15 minutes to cool. As for storing, I would recommend putting it in a container in the fridge. I also used 1/4 cup of honey instead of 1/2 cup (you could also use 1/3 cup, it's based on the amount of sweetness you prefer) and the mini applesauce cups (you only need to use one to get 1/2 cup, which is great to keep them fresh rather than using a large container). Overall, I really liked this recipe and how easy it was to make, especially given my current foot injury. So the less moving around the kitchen at the moment, the easier it is :) Also, shoutout and thank you to my neighbours and family for all your help during my injury recovery, I really appreciate you supporting me!
