Today I decided to make these delicious Red Velvet Chocolate Chip Muffins! Perfect for a spin on a typical chocolate muffin recipe, with the fluffiness of a cupcake. In fact, it's a bit more like a muf-cake or a cup-fin? Haha, okay, so maybe the name needs a bit of work, but you get the idea. Anyways, there weren't too many alterations that I needed to make for this recipe, except for baking them for 8 minutes longer than the recipe prescribed. An alternative that you could do would be to swap out the chocolate chips for white chocolate chips for both a pop of colour and a slightly sweeter taste. You could also try making mini muffins if you have more people to share them with :) Even cuter if you try to dye it a different colour, I've always wondered what a purple or blue muffin would look like...maybe that will be the next recipe!
