Strawberry Cheesecake Muffins with Streusel Topping!

Today I decided to make something a little different and also find a way to use some fresh strawberries since it's springtime! However, I didn't want to make any ordinary strawberry dessert, hence, why I decided to make these soft and fluffy Strawberry Cheesecake Muffins topped with Streusel Topping. This recipe is perfect for those of you who love light and fluffy cheesecakes, fruity desserts, and muffins, but can't decide which one you want to eat first!


In terms of alterations, there were very few that I needed to make such as substituting ingredients. For instance, I used best brown sugar instead of light brown sugar and I used almond dairy-free vanilla yogurt instead of plain yogurt, as it was all we had at home at the time. In addition, this recipe took a tad bit longer in preparation than expected around 35-40 minutes instead of 25 minutes, but it was so worth it for these delicious muffins!


The recipe also made 12 instead of 14 muffins, but this also may vary depending on how much you filling you put in each muffin tin. As for baking time, it was spot on for 5min at 425F and 18 min at 350F. Overall, I really enjoyed making this recipe and I hope you have fun baking them too! Also, for those of you who may be wondering where the strawberries are, they're in the muffin filling, which you can find in the bottom and top sections of the muffin :) Happy baking!
