Vivien's Pumpkin Almond Flour Muffins!

Today I decided to make my neighbour/pilates instructor/family friend Vivien's delicious Pumpkin Almond Flour Muffins, which are not only gluten-free and sugar-free, but are also suited for those of you who follow the SCD (Specific Carbohydrate Diet). One of the best things about this recipe is that first of all I love pumpkin and also it's super simple to make and is a great healthy snack on the go or quick breakfast. A few alterations I made include using 4 Medjool dates instead of 3, as I used 3 but I prefer a slightly sweeter muffin. I also used Deglet dates instead of Medjool simply because I didn't have any Medjool dates, and I also used pitted dates instead of dried dates, so I didn't have to soak them in boiling water. I also grated fresh ginger and used 1.5 cups of almond flour instead of 2.5 cups, but this depends on whether or not you include the boiling water with the dates. I also used canned pumpkin instead of baking my own, but I definitely want to try that out in the future. You can also swap out the raisins or pistachios for your favourite dried fruit or nut combinations. I ended up baking it for 25min at 325F and it turned out perfectly.
