I started off making these cupcakes to start a fun little project on the weekend, which ended up being my entire Saturday!! I had no idea making these cupcakes would require so much attention, but I suppose my finishing touches probably had more to do with that, rather than the recipe itself. In the original recipe it supposedly makes 12 regular sized cupcakes, but because I wanted to be able to share them with more of my friends and family, I decided to make them mini sized! This resulted in 48 mini cupcakes that required a lot of dedication and time, which I could not do without my handy Kitchenaid! Although, they took a long to decorate, they were definitely worth the time, and I received so many positive reviews that I'll make them again in the future!
