This Red Velvet Cheesecake will definitely not be forgotten after serving this special treat to your co-workers, family, friends, and neighbours, I guarantee it! Despite the fact, of how long it takes to make this spectacularly decadent and creamy cheesecake it is definitely worth it! For me, I've always enjoyed baking treats that take up a lot of time to keep my mind focused and to set a goal, so this was the perfect cake to make for me. To start off I mixed and baked the red velvet cake batter in the oven in hopes of prerfection. Meanwhile, I started the cheesecake batter and mixed and beated the cream cheese to perfection. Once I had finished the cheesecake batter the red velvet cake was ready to come out of the oven and ready to cool. After putting in the cheesecake batter and cleaning up all of my utensils, it was finally time to make the delicious and creamy vanilla buttercream frosting. Once the cheesecake was out of the oven I set it aside to cool on the cooling rack. Now since this is a two day project I woudl have to wait until tomorrow for decorating the final touches of the cake. The next afternoon I headed over towards the red velvet cheesecake to cut in half with my handy dandy cake cutter from Michaels! Surprisingly, the cake cutter was a rather good price and since I had previously used it in Michaels Wilton Cake Decorating Class, I was ready to go. Now, cutting the red velvet cake was a little tricky and needed a lot of manouvering but once you get to the middle of the cake you're home free :) After cutting the red velvet cheesecake, I took the buttercream frosting out of the fridge to make sure it was manouverable (if you want to avoid the frosting from becoming stiff, you can make it on the day of assembling the cake, but I just wanted to save time, as I had a lot to do the next day). I then brought out my paper cake stand to stack the cake on ( you can use any type of stand but since it was for home use I decided that the paper one was okay). I layered alternatively starting with red velvet and switched with a cheesecake layer. If you want you can put some frosting between the layers to make sure they stay together, but I only needed to use a little bit, since the layers were firm enough after cooling them the previous day. Afterwards, I made a quick crumb coat on the outside of the cake and then put it in the fridge for about two to three hours to harden. Meanwhile, I shredded a block of white chocolate in a bowl to use on top of the cake once it was complete. Once the two hours was up, I applied a final coat and used parchment paper among other tools to smooth out the sides and top. After putting it in the fridge one more time for two more hours, I sprinkled the white chocolate shavings on top and added fresh cherries from my backyard cherry tree to add some colour and an aesthetic appeal. After presenting the cake for my aunt, it was time for the big reveal of the layers. I was so ecstatic after seeing that it stayed together along with the multiple reviews about the tremendous taste of the cake. Although, this is a long baking project that definitely requires commitment and dedication, I would definitely make it again and recommend it to anyone else who is willing to try out this delicious and decadent challenge!
