Avocado Cake with a Lemon Glaze!

Today I decided to make this delicious Avocado Cake drizzled with a Lemon Glaze and sprinkled with chopped walnuts. In terms of alterations, I used lemon juice for both the cake and the glaze instead of lime, simply because I didn't have any on hand. However, I would definitely try making it with lime next time around, as I think it would create a whole other palate.


In addition, I didn't have any pistachios on hand, so I ended up using walnuts, however, I think the pistachios do add a very nice colour that would accentuate the green colour. One tip that I would recommend is using either a food processor or stand up mixer to beat the batter, especially for the initial stages. You'll need to whip the butter for about 5 minutes to make sure you're able to obtain a creamy texture incorporated with the avocado.


I also only used 1 avocado, as the one I had was quite large, however, I would use 1.5-2 avocados if your avocados are on the smaller side. Another alteration you could add would be some lime zest to the cake batter, which could add a pop of colour. Also, make sure to let the cake cool in the pan for about 20 minutes before taking it out to serve.


As for the consistency of the cake, it has a bread-like appearance on the surface and a cake-like texture once you eat the cake. Another alteration you could make would be to substitute the lemon glaze with a chocolate ganache on top for a more decadent dessert.
