Old-FAshioned Oatmeal Cake with Coconut Pecan Topping!

Today I decided to make this delicious Old-Fashioned Oatmeal Cake with a Coconut Pecan Topping! Perfect for the whole family and delicious to boot! This recipe is not only easy to make, but it also makes enough for multiple tastings, as well as extra servings to share with your friends and family.


In terms of modifications, there weren't many, however, I did swap out the almonds for roasted pecans and chopped them up before adding them to the topping mixture. Also, I ended up using best brown sugar instead of light brown sugar, and it worked out well. Another addition you could make would be to include raisins or chocolate chips for an extra surprise in the mixture.


As for baking time, it only took 35 min at 350F and an additional 4min under the broiler setting. In total, this recipe made 30 slices, depending on how portion your cake sizes. Overall, this recipe turned out really well and I hope you enjoy making this cake too! Happy baking :)
