These cute mini cheeesecakes are the perfect bite sized treats for those who want their own individual cheesecake but in a smaller size! With the beautiful graham cracker browned bottoms layered with a fluffy and creamy cheesecake layer. Which is then topped with an unlikely partner of a sour cream frosting, who would have thought? To add more colour and extravagance I roasted sliced almonds in my handy toaster oven that baked them to perfection. To know when these are done roasting, just wait to smell the almond aroma, you'll know when it's done! If you don't have a toaster oven, they work perfectly in a regular oven too, as I've tested before. But I just prefer using my toaster oven as it doesn't require preheating! Then to top it off I sliced some fresh strawberries that I got from a local market, that were luckily for me in season! Sureprisingly, despite how stange this combination of Sour Cream Frosting with Cheesecake may seem, the sour cream isn't sour at all and is the perfect balance as it isn't too sweet! It also makes the mini Cheesecakes seem less heavy on the stomach and more manageable to finish! I've heard many rave reviews about these mini cheesecakes and they can be done with any berry of the season! I made these initially for my friend's birthday, but they are great for any occasion, especially in the summertime! Remember to always bake with tender, love, and care (TLC)!
