These cranberry and pine nut biscotti are the best treats to have with tea! They are crispy and light and are whole lot easier than anyone would ever imagine! I was actually extremely suprised at how easy it was to make biscotti as I always thought it was impossible and a delicacy that could only be made by culinary chefs! Interestingly enough to make them into small slices all you had to do is put the dough together into a log and then cut the log into thin slices and place them onto a greased baking sheet! Once they are out of the oven and cool down they go great with coffee and tea! The reason why I first made biscotti was because I always love buying the biscotti THINaddictives from Costco and I thought that since I like them so much I should learn how to make them at least once in my life. So, once I found a great recipe from a baking book from none other than Costco, I used my handy Kitchenaid mixer and decided to make it! After making the biscotti, I realized how fabulously easy it was to make them and I would definitely make them again! For those of you out there who love biscotti as much as I do, you should definitely try making it because nothing beats homemade biscotti, although convenience never hurt either ;) However, if you plan your meal plan for the week right then this will be no problem for you!
