These springtime bunny carrot cake pops with a white chocolate frosting are perfect for any spring get togethers, bunny lovers, and Easter desserts! To make these cake pops I used my babycakes cake pop maker that works great and have been using ever since! It also only takes about 4-6 min per batch of 12 cake pops, so you can make plenty of them for bake sales! You can also customize the design of the carrot cake pops to look like carrots or any theme that you desire but I chose bunnies because I made them for an Easter dinner and they were a huge hit with both kids and adults! The great thing about cake pops is that it allows you to have a small amount of cake and keeps the moisture inside too! To make the frosting is really simple all you have to do is melt white chocolate wafers in either the microwave or in a bowl over a boiling pot of hot water on the stove! Once the cake pops are cooled then you can dip each cake pop stick into the icing to make sure they stay on the cake pop, then dip the entire cake pop in the white chocolate and it should come out nice and smooth. Since the white chocolate hardens really fast be sure to make a small batch of the frosting at a time and to make sure that you have enough of the white chocolate because otherwise it becomes a whole lot harder to dip the last few cake pops. Once the white chocolate hardens onto the cake pop then you can make some icing and use colour dyes such as black for the eyes and the whiskers and pink for the nose and the mouth. After you have mixed in these colours than you can put the icing into icing bags or a ziplock bag as previously talked about in a previous post and you can then start to make two dots for the eyes and 2-3 long lines for the whiskers on each side of the cake pop! After that you can then head over to the pink icing and make a heart shaped nose in the middle of the cake pop and then make a half smile for each side of the bunny's mouth. After that comes the ears which can be made with multi coloured candy corns! Now to make the candy corn into ears all you have to do is to cut off the white tips of the each candy corn with scissors and to then use some of the left over white chocolate frosting to attach the ears to the bunnies heads! For the bunnies ears I liked to match up the ears colours for each bunny but you can mix and match them if you like it's all up to your preference! Then after you let them dry, voila you are ready to present! If you would like to make them extra special you can either find a cute cake pop board that has holes in the middle of the board to allow a spot for the cake pops to stand, or you can delicately wrap each cake with either clear or coloured cellophane and then tie each one up with curled ribbon to make them extra special!
