Watermelon Cake with Whipped Cream!

This watermelon cake with whipped cream is the perfect balance between healthy and a treat! It's also a great summer cake as it's made almost entirely of watermelon perfect during the fruit season! Also it's great for all the whipped cream lovers out there! If you or your guests aren't a big fan of whipped cream you can also subsitute it for vanilla yogurt as I've also seen that being done too! To make this delicious cake all you need is a firm but juicy red watermelon, which will be perfect for carving into a cake! To carve the watermelon you can start off by cutting off the ends of both sides of the watermelon to give it a base for the watermelon to stand and room on top of the cake for the fruits on top. Then you can carve off the sides of the watermelon just above where the watermelon starts to turn red. Then next comes the whipped cream which you can easily make in a Kitchenaid mixer, hand mixer, or by hand if you're really ambitious! Make sure to make the whipped cream thick so that it will stick to the watermelon! After that comes icing the cake to do this you can use a spatula and some knives to spread a layer of whipped cream onto the sides and the tops of the watermelon. Then to add some texture you can roast some sliced almonds in the oven or the toaster oven and cover the sides completely! Then for the final touches you can slice some fresh strawberries and add any other berries such as blueberries, raspberries, and blackberries and decorate the top of the cake any way you want to! Have fun with it! Also you can make coconut whipped cream for a healthier version off whipped cream! You can also make this cake into layers simply by cutting the watermelon into round circles in different sizes and then stack them on top! Although, this project doesn't require any baking it sure is great to be out of the kitchen during the summer while still being able to bake a cake!
