This jam sponge is perfect for tea time everywhere! It has a soft texture that blends perfectly with the whipped cream and bluberries! It's the perfect combination with tea! To make it extra special I sprinkled on top powdered icing sugar! Also the easiest way to cut the cake in half for the layers is by using a cake cutter made by Wiltons at Michaels, using dental floss, or a sharp serated knife! The whipped cream is simple to make with either an Easy Whip it, handmixer, or Kitchenaid Mixer. The recipe that I use to make the whipped cream can be found in one of my previous posts! First put a complete layer of blueberries that can either be frozen or fresh! Make sure to cover the bottom layer completely so that every bite includes blueberries! You can also use any other type of fruit that you desire such as sliced strawberries, raspberries, blackberries, or any of your favourite fruits! If you want to get really fancy you can also mix it up with multiple different types of fruits to make it more interesting. Also make sure to spread the whipped cream evenly in the middle of the bottom layer of the cake so that every bite includes whipped cream. Overall, this cake was a huge hit and I would definitely recommend this cake to anyone looking for a tea time cake that is simple and delicious!
