These blueberry layered cheesecake parfaits will knock your socks off! The main reason I made these cheesecake parfaits in the first place was actually for a fake chopped competition that we were having at my foods class in school. So my friend and I decided that we would make a dessert that presented well, was fairly easy to make, impressive, and could adapt to any of the random ingredients that we would be given. I couldn't quite find the recipe for these cheesecake parfaits but when I do I'll be sure to share it with you as soon as possible! To start off we found some glasses that we could layer the cheesecakes in, and found that two glasses would suit the occassion perfectly, as there were two judges! Then we started with the graham cracker layer which consisted of melted butter and crushed graham crackers. The next task was the cheesecake filling luckily this was a no-bake cheesecake parfait so it saved us a lot of time. We then mixed the cream cheese with the sugar, vanilla, etc. which would later form our second layer. After layering each glass alternating between the graham cracker layer and the cheesecake layer, we used our special ingredient of jujubes by melting them down on the stove with water to create a special conconction. It worked out fairly well but the pan we were using wasn't the best type of pan we could've used. Nonetheless, we added the blueberries, our second secret ingredient, into the sauce to absorb the sweetness and added them into each layer as well. After using up all of our layers of cheesecake and graham crackers we then finished the tops of the glasses with a generous layer of blueberries sprinkled with graham crackers, jujube sauce, homemade whipped cream, and then carmelized the remaining jujube sauce with the grapes, our third secret ingredient. After soaking the grapes in the jujube sauce we then rolled it in sugar and cut them in half adding another dimension to our dessert, and voila there you have it! The amazing blueberry layered cheesecake parfait in under 30 mins!
