These unexpectadly adorable mini lady finger chocolate eclairs are the best treat since sliced bread! Super easy to eat and a treat for everyone! They are great as a mini dessert and for catering parties so that everyone can have a little bit of every dessert, if you plan on making multiple! As for the pastry they turned out great but beware that they do turn out rather on the smaller side! Once you add in the whipped cream in to the middle and the melted chocolate on top there's no other dessert you'll want to eat. For the whipped cream you can either use an Easy Whip it, hand mixer, Kitchenaid, or by hand! For the chocolate you can place your favourite type of chocolate, be sure to break it into smaller pieces if it isn't already. Then place it in a bowl and put it on top of a wire rack inside a pot filled with water over the stove. Then place the stove on medium to medium high heat and remember to stir the chocolate around, so that it doesn't burn. Also, because there will be steam rising from the water boiling in the pot be extra careful and when the chocolate is done melting be sure to use either tongs o oven mittens to take the bowl of chocolate off of the wire rack. Then turn off the stove and place the pot into the sink. From there you can use a spoon to glaze over the tops of your mini eclairs once the eclairs have cooled. If you do want to make regular sized eclairs you can easily do so by forming the dough with your hands into the size of a regular shaped eclair, as the eclairs won't expand once they are in the oven.
