Big Soft Ginger Cookies!

Big Soft Ginger Cookies to the rescue! Not only are they simple to make but they also make enough to go all around to all of your friends, family, and neighbours! In the original recipe it calls for powdered ginger but my special secret is that I like to grate fresh ginger into the recipe, which makes it ten times better. The batter will come out soft, so don't be worried if your dough is delicate. Also make sure to cover the cookies completely with sugar by rolling them in a bowl of sugar. Make sure to lay them out evenly on the pan with space between them as they will typically grow to twice the size. I like to roll the cookie dough into the size of a golf ball, and don't worry about flattening them, as they will do this by themselves once they are in the oven. Another great thing about these cookies is that they only take 10-12 minutes in the oven, so if you only have 2 cookie sheets you don't have to worry about waiting for one pan to cool down before putting it in the oven again, because of the long cooking time. These are great way to spice up your life, with the numerous spices including cinnamon, clove, and nutmeg! Happy Baking!
