Happy Valentine's Day! Want to celebrate with something extra special for someone special? Okay, alright that was way too many "special's" in one sentence, but you get the point. Anyways, the perfect solution is by making these adorable Mini Red Velvet Cupcakes with Cream Cheese Frosting! They are a fan favourite and they match Valentine's Day perfectly. What is a better combination than cream cheese and red velvet cupcakes? Also, it's a great way to show someone how much you mean to them at the same time. They also make 55 mini cupcakes, so you can also spread the love and give them out to your friends, family, and loved ones :) They are easy to decorate as all you'll need are heart shaped sprinkles or some other really cute decoration like making your own chocolate hearts. However, on a scale of 1 to 5 I would rate these a 3/3.5 due to the rough/crispy texture, however, I would recommend making the recipe from the "The Cupcake Diaries" cookbook, but this time around I didn't have sour cream, and wanted to try out a new recipe. As for the frosting I used a 1M Wilton Frosting Tip and swirled in a clockwise direction. To make it easier to fill the piping bag you can put the bag in a cup and fold down the sides of the bag, and then scoop in your icing/frosting. Then you can use either a hair elastic or elastic band to wrap around the end to make it clean to frost. However, make sure you don't overfill the bag, as it will come out of the top and onto your hand/table. Trust me, I know from experience :) Now, go out and celebrate this day of love by baking these cute and adorable mini cupcakes for your special someone :)
