Here's yet another amazing recipe to use up all of your leftover ripe bananas! These are great to make when you want to try out something new but also great for those who love banana cake or banana bread, as these taste very similar to it but in a cookie form! For the icing I used 2 cups of icing sugar and eyeballed it about 1-1/2 tsps of milk. The consistency will be in between a thin and thick icing. I spread a thin layer of icing on top of each cookie to make sure it wasn't too sweet. I ended up using about 3- 1/2 small-medium bananas. To make it easier I spread out the cookies about 5-8 inches apart, as I made rather large cookies and they needed more space to spread out. Also, I used an ice cream scooper to scoop the batter onto the tray, as the dough is rather liquidy, but don't allow that to fool you, because the batter is perfect the way it is, and makes the cookies super soft, light, and fluffy! Overall, this is an amazing recipe for leftover bananas, with a sweet twist :)
