Do you love donuts? Specifically Boston Creme Donuts? Then these cupcakes are the perfect ones for you! With a perfectly made pastry cream in the middle and a chocolate ganache on top you won't be disappointed. All of this together in one amazing cupcake! These were definitely a hit with everyone who has had them, and despite how decadent they look, they are great for both those who love sweets and those who don't, with just the right amount of flair of sugar! Who wouldn't be happy with one of these cupcakes! For the filling, I used a knife to cut a hole in the middle of each cupcake, even though I have a cupcake corer, these cupcakes were too moist to do so, as they would stick to the cupcake-corer. Also, its pretty easy anyhow, especially when you have mini cupcakes, as the centres are already so tiny. As for the chocolate ganache, I poured the finished product into a deep dish bowl and dipped each cupcake top into the bowl and gave it a swirl with my wrist to completely cover each top. And for those that didn't quite make the cut, I used a spoon to drizzle on top, and twisted it in a circular motion with my wrist, to make sure it didn't drench the cupcakes. Also, before I did this, I put half of the remaining leftover cupcake core back on top of some of the pastry filling to make sure it wouldn't fall out, while I did this. Also, I would recommend waiting a bit until the pastry filling cooled down before you pipe it into the middle. Additionally, there will be lots of pastry filling leftover, so if you happen to have eclairs or other puff pastry desserts that need a filling be sure to use this recipe :) Try out these awesome Boston Creme Cupcakes today, and you won't regret it!
